This sweet and syrupy coffee is a Peaberry Microlot from Costa Rica. What's a Peaberry Coffee? Most coffee cherries have two coffee beans in them, but peaberry coffee is a natural mutation where there is just one tiny seed, which is rounder and smaller, making this coffee a little extra special. Not only does it take more time to harvest, fans of peaberry coffee also find that the coffee is a bit sweeter and more flavorful.
You'll just have to try it for yourself.

This coffee is from Kathia Zamora and her fourth-generation family farm and micro mill, Cloza Estate. This peaberry microlot is named The Kiddos for her sons, as they are "little beans," and she delights to share the legacy of coffee farming that she fell in love with at a young age.
Since 2001, Kathia has managed the farm, and under the watchful eye of her parents (Clodoveo and Jeannette) she has improved the quality of their coffee by planting new varieties, and updating facilities and processing techniques.
A long-time member of the IWCA- (International Women Coffee Alliance - Costa Rica Chapter), she continues to serve on the Board of Directors. Her farm obtained the Women Care Certification, representing the family commitment to supporting the empowerment of women in the coffee industry.
This special coffee is also a honey process, which means that the outermost layer is removed, not the sticky layer around the coffee seeds. This process uses less water and has more flavors than washed coffee, where all the sticky layer is removed.
