At East View Coffee Company, we believe great flavor comes from great process. That’s why our handcrafted chocolate bars start with the same philosophy we use for our coffee—roast with intention and never cut corners.

Our secret? We roast our cacao beans using a coffee-style drum roaster instead of a traditional oven. This unique method unlocks bold, complex flavors that mass-produced chocolate can’t match.

From farm to bar, every step is done with care—and you can taste the difference.

Our Craft Chocolate-Making Process

We go far beyond the basics. Here’s how we turn raw cacao into roasted chocolate worth savoring:

1. Ethically Sourced Cacao

We partner with farms that are committed to fair labor and sustainable practices. The quality of the bean—and how it’s fermented and dried—lays the foundation for amazing flavor.

2. Cleaning & Sorting

Each batch is hand-sorted to remove any debris or defective beans. Only the best make it to the next step. 

3. Roasting — The East View Way

Instead of a static oven, we use a drum coffee roaster for precise control over time, temperature, and airflow.
This step is crucial for:

  • Highlighting the origin’s flavor profile

  • Enhancing consistency

  • Creating a rich, aromatic base

4. Cracking & Winnowing

The roasted beans are cracked to separate the nibs (what becomes chocolate) from the husks.

5. Stone Grinding & Conching

We use stone melangers to slowly refine the nibs over hours—or even days.
This slow process:

  • Reduces grit for a silky texture

  • Blends in organic sugar and cocoa butter

  • Deepens the flavor through conching

6. Tempering

By carefully heating and cooling the chocolate, we form stable crystals that give our bars their:

  • Signature snap

  • Smooth, glossy finish

  • Resistance to melting too easily

7. Molding & Hand-Wrapping

The finished chocolate is poured into molds, cooled, and wrapped. Every bar tells a story of care and patience.
